SEABOURN INTRODUCES REGIONALLY INSPIRED CULINARY PROGRAM ABOARD SEABOURN ENCORE FOR INAUGURAL ALASKA SEASON
Seabourn has introduced a new culinary program for its Alaska season, featuring regionally inspired dining and beverage experiences designed to reflect the unique ingredients and traditions of the area. This program debuted with the inaugural Alaska voyage of Seabourn Encore in May 2026, aiming to enhance the connection between guests and the destination throughout each sailing.
Mark Tamis, president of Seabourn, commented on the initiative, stating, "Seabourn Encore's Alaska season gave us the opportunity to bring the destination into focus in a more intentional way. From the first evening on board through the final days of the voyage, the culinary program is designed to reflect where guests are and deepen their connection to the experience."
The program features a variety of dining experiences across The Restaurant and The Colonnade. Highlights include the Surf & Sear Sailaway, an Alaskan Seafood Boil, Fisherman's Table, Midnight Sun Dinner, and Alaskan Brunch, all of which showcase seafood and foraged ingredients. Some of the offerings are paired with artistic collaborations, such as the Midnight Sun Dinner menu artwork created in partnership with Alaskan Native artist Crystal Worl.
The beverage program complements the culinary offerings with a selection of original cocktails and local beers. Five specialty cocktails have been crafted for the Alaska season, each using regional ingredients. The program also extends to the open decks on suitable days, offering informal experiences like caviar events and hot chocolate service amidst Alaska's landscapes.
Seabourn Encore began its 2026 Alaska season on May 14, 2026, operating a series of seven- to 14-day voyages. The itineraries include both iconic and lesser-known ports and provide opportunities for glacier viewing and expert-led excursions. Guests will receive complimentary Helly Hansen PolarShield Parkas during their voyages.
